CIGARS
gourmet series robusto, 5 x 50 (medium bodied).....................................................................20
gourmet series belicoso, 6 ¼ x 52 (medium bodied)................................................................25
p.g. cigars have earned their international reputation by word of mouth for their balanced medium strength, rich, spicy and deliciously smooth flavors and aromas. made in santiago, d.r. with complex aged fillers and binder, and colorado shade grown connecticut wrappers, (grown in ecuador) p.g. cigars have come to represent the finest in quality, consistency and integrity.
reserva exclusiva churchill, 7 x 48 (medium/full).......................................................................25
medium to full bodied, smooth and simply delicious, the richness of this cigar can be attributed to its very old and aged fillers, binders and wrapper. packed with complex flavors and aromas, the “r.e.” has achieved great recognition among the elite of cigar connoisseurs. an exceptional cigar form 10 year old tobaccos.
15th anniversary belicoso extra, 6 ¾ x 52 (full-bodied)...........................................................30
an intriguing, full bodied, rich and smooth cigar, filler tobaccos used in the 15th anniversary line are grown in the original farms used to make the first pg’s in 1990. the colorado/nicaraguan wrapper is dark and oily and enhances the flavors of the cigar to make the tobaccos (which have been aged for 5 years) smooth and delicious. for the relatively new smoker, it represents a kaleidoscopic range of tastes. for the seasoned smoker it is reminiscent of old style cuban puros from the mid-1950s.
symphony 20 salomones, 6 7/8 x 57 (full-bodied)..................................................................40
covered with the greatest wrapper we have ever seen (dark, oily, and smooth) it is combined with four complex fillers and a havana seed binder. the symphony 20 has achieved a height of rich elegance and taste hitherto unknown outside of cuba – far exceeding our expectations.

PHILOSOPHY
our beverage program parallels the philosophy of the menu - a modern twist on the classic american steakhouse. the focus of the beverage program is on preserving classic and modern cocktails (while creating some innovative cocktails of our own) through the use of only the highest quality ingredients:
- we hand-squeeze our citrus juice daily
- we use premium, small batch cordials, which greatly improves the quality of all of our cocktails
- we pour all of our sodas and mixers from glass bottles (we use fever tree club soda, ginger ale, tonic water, and regatta ginger beer)
- we make many of our own bitters, tinctures, and syrups
- we grow our own herbs and hand-pick them everyday
please be aware that because of this, many of our cocktails carry small supplemental charges, and may take a few minutes to create.
please be aware that because of this, many of our cocktails carry small supplemental charges, and may take a few minutes to create.
we recommend that you peruse all of the cocktails (which are broken down into broad categories), and then look at our selection of spirits before making a decision. please feel free to speak to your server or bartender for clarification on our products or cocktails.
Cheers!
Jamie and Duane

The Sauvignon Blanc grape originated in Bordeaux, it is widely grown in the Loire Valley, California, New Zealand, and Austria. Although the flavor components of melon, lime, and passion fruit are similar among all the regions; the intensity and acidity levels can vary, depending upon the soil and climate. California Sauvignon Blancs are softer and show more fruit, while the New Zealand examples are brighter and spicier. In contrast to the viscous and powerful Sauvignon Blancs from Bordeaux, the wines from the Loire Valley are leaner and show more minerality.

Not only is Chardonnay one of the most popular grape varietals in the world, it is one of the most versatile and flavorful. Basic Chardonnay can be vaguely fruity and neutral, but at its best, Chardonnay acts as an expression of the vineyard in which it is grown. Chardonnay from Burgundy takes a while to mature, while California Chardonnay is more approachable in youth. Classic flavors include apple, pear, butterscotch, honey, and pineapple.

Due to the limestone soil and cooler climate, wines made from Chardonnay grown in Burgundy are higher in acidity. In their youth they are lemony and minerally, but with bottle age, the true ethereal flavors of white Burgundy develop. In California, by contrast, these flavors develop more quickly as a result of the warmer climate and most are ready to drink on release.

Because of both its cellar longevity and its ability to maintain varietal identity while reflecting the individuality of its 'terroir', Riesling may be the best of all the white wine grapes. Although it is low in alcohol and light in body, the finest Rieslings have incredible aging potential, and develop a vivid and zesty bouquet that is often referred to as 'petrolly'. It can produce wines that vary from dry to very sweet. Known for its combination of acidity and fruit extract, a typical Riesling is described as flowery, yet tart with grapefruit and honeysuckle-like flavors. No grape other than Riesling can produce a wine with such finesse, purity of fruit, intensity of flavor, and a 'lift' of acidity.
